I make this salad for my husband and I. My oldest doesn’t like raw tomatoes and the texture of chick peas. I’m afraid to give chick peas to my youngest since he doesn’t like to chew.
This salad is super easy to prepare with almost no prep time needed. You can make this in the morning if you forgot to pack a lunch or during the weekday if you need a yummy veggie side. It literally takes less than five minutes to prepare!

Ingredients:
1 can of Garbanzo Beans/Chick Peas
1 ½ cup of cherry tomatoes
¼ tsp coriander
½ tsp of garlic powder
1 ½ cup of Cilantro
Salt and Pepper to Taste
2 TB of Sesame Oil
1 TB of Balsamic Dressing

In a colander, rinse tomatoes and chickpeas. While the colander is draining, cut the cherry tomatoes in half and transfer them into a bowl. Once the chick peas are done draining, transfer those into the bowl of tomatoes.
Chop cilantro and add to the bowl.
Put in coriander, garlic powder, salt, and pepper and mix.
Add the sesame oil and balsamic dressing and mix.
Add more salt if needed and Enjoy!
This salad is so good on it own. We've eaten it by itself, as a relish on top of salmon, or as a side to baked chicken.
